Cranberry Pecan Sour Cream Bread

Some 10 years ago .... or more ..... my mom used to collect recipe cards for my sister and I from the grocery store.  I don't think I ever used one.  Not because I didn't appreciate them or thought anything bad of them.  They actually looked quite tasty.  But I'd always think, "oh, I'll make that sometime soon - that sounds good".  Or something along that line.  Only.... sometime soon never came. 

Until now!

I was moping about on Thanksgiving, thinking of all the wonderful goodies my family would be eating.  I seen pumpkin roll mentioned on facebook and decided then and there that while I wouldn't be cooking us a turkey dinner I would at least make a festive dessert.  I began flipping thru my recipe file looking for pumpkin roll when this cranberry bread caught my eye.

It was a card from way back that I was saving for "sometime soon".  Hmph.  Cranberries are quite festive.  And I happened to have all ingredients.  So I decided that sometime soon was NOW. 

Am I ever glad.  This bread is amazing!!  AMAZING!

Except for when you don't cook 1 of the 3 breads all the way thru and it's a bit raw.  Then it's not amazing.  It's actually quite gross.  So make sure you cook yours proper.  ;)

Let me just say this. The batter reminded me of the smell of the orange Flinstones Push-Ups. Need I say more?

The recipe says to cook them in little 3x5 pans.  Luckily I had some foil ones my Grandma gave me..... some 10 years ago or more.  What is wrong with me!?  Anyways.  They look so cute!  Little mini breads!  They'd be perfect to give away as a gift.

Unless you're a hog like me.  Then you only think about how perfect a gift it would be for a neighbor or friend while you throw back a 3rd slice.

Now, please note, I've recently looked this up on google and found it on several different websites.  But I do believe it "belongs" to Daisy Brand as the recipe calls to use that exact sour cream, and one of the websites I found via google regarding this recipe was, of course, Daisy Brand.

What you'll need:

2 cups all purpose flour
1 Tbsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup sugar + 1 Tbsp.
1/4 cup softened butter
1 beaten egg
1 cup sour cream
1/4 cup orange juice
1 tsp. freshy grated orange zest
1 tsp. vanilla extract
1 cup chopped fresh cranberries
1/2 cup toated, chopped pecans  {I used walnuts and it turned out fantastic}


Heat the oven to 375 degrees. In small mixing bowl combine the flour, baking powder, baking soda, and salt; set aside. In a large mixer bowl add ½ cup sugar and butter. Beat until creamy (1 minute). Add the egg, sour cream, orange juice, orange zest, and vanilla extract. Continue beating, scraping the bowl often, until creamy (1 minute). Pour the flour mixture into the sour cream mixture and mix just until moistened. Gently stir in the cranberries and the pecans. Spoon evenly into 3 greased 3 x 5-inch pans. Sprinkle the tops evenly with the remaining 1 tablespoon of sugar. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes. Turn bread out of the pans. Cut into slices. Cover leftovers.

It comes out tasting more like a cake than a bread.  It's really fluffly and tastes oh so good.
